2 chicken breast

4 rashes of bacon

8 slices of cheese

1/2 avocado

BBQ sauce

  1. Pre-heat oven to 180*C                                                                                               
  2. Line an oven tray with baking paper
  3. Cut cheese into slices
  4. Half avocado
  5. You may choose to remove the tenderloin from the breasts and set aside to use for smaller children who don't like the added extras you are preparing
  6. Cover chicken with a piece of glad wrap
  7. Using a meat mallet, pound chicken till it is the same thickness all over
  8. Cut breast in half to make 4 pieces
  9. Using a spoon or knife place some avocado onto chicken and roughly spread
  10. Drizzle BBQ sauce over the avocado
  11. Place 2 piece of cheese onto the chicken
  12. Wrap chicken in bacon, ensuring end pieces are underneath the breast to stay secure
  13. Bake for approximately 30 minutes
  14. Serve
