Banana and Cinnamon Pancakes

Ingredients Method

1 c self-raising flour

1/4 c brown sugar

1/2 teaspoon ground cinnamon

2/3 cup skim milk

1 egg, lightly beaten

cooking oil spray

1 large banana, cut into 24 slices

low-fat ice-cream, to serve

1.Sift flour, sugar and cinnamon into a large bowl

2.Whisk egg, then add the milk and egg to the dry ingredients

3. Whisk until smooth

4. Rest mixture for 30 mins

5.Spray a frying pan with oil

6.Drop 2 tablespoons of batter into pan 

7.Top with slices of banana

8.Cook over medium heat for 1–2 minutes, until bubbles appear on surface

9.Flip and cook for another 1–2 minutes 

10.Repeat process to make 8 pancakes

11. Serve with either ice cream or icing sugar
