Banana Bread

 

Ingredients     Method

3 or 4 ripe bananas, mashed

1/3 c melted butter

3/4 c sugar

1 egg, beaten

1 1/2 t cinnamon

1 t  vanilla

1 1/2 c self raising or all purpose flour

1 t baking soda (if using the all purpose flour)

1 t salt

butter for greasing

  1. Pre-heat oven to 175°c

  2. With a wooden spoon, mix butter into the mashed banana in a large mixing bowl

  3. Mix in the sugar, egg and vanilla

  4. If using the all purpose flour, sprinkle the baking soda over the mixture and stir through (omitt this step if using self raising flour)
  5. Add the flour last, mix well

  6. Pour mixture into greased and lined loaf tin

  7. Bake for 50-55 mins

  8. Allow to cool slightly in tin before transfering to a cake rack

  9. Slice to serve
