Gnocchi with Creamy Pesto and Bacon Sauce

 

Ingredients    

Method

1t olive oil


1t crushed garlic


1 onion, finely diced


2 shallots, chopped


4-6 rashes of bacon, cubed


1 packet of gnocchi


2 t tomato pesto


2 t basil pesto

 

300ml light cream


2 T light sour cream 

 

1/2 c shredded Parmesan cheese


1/4 c basil (optional)

 

Or use Philadelphia Light Cooking Cream in place of the Cream and Sour Cream

1. Heat oil in frypan


2. Add garlic, onion and bacon. Cook for 5 mins or until onion is soft and bacon lightly browns


3. Add the tomato and basil pesto to frypan.


4. Add cream and sour cream and cheese to frypan. Stir over low heat sauce starts to thicken slightly. Remove from heat

 

5. Add pestos and stir through


6. Prepare gnocchi as per instructions


7. Return frypan with sauce to low and and add the drain gnocchi


8. Add shallots and toss gently to combine 

 

9. Spoon into serving bowls.


10. Serve

 

This sauce is also tasty serviced over chicken or beef.

You can use either fresh or dried gnocchi.
